Happy March! The weather warmed in Minneapolis last week, and most of the evidence of winter has melted. I’ve lived in this state long enough to know we’re likely in false spring, but I’ve been enjoying the temporary reprieve nonetheless! ☀️

My kitchen gets the most use in the winter. When it’s so cold that it physically hurts to go outside, the temptation to visit restaurants on a whim weakens. The shorter days encourage hibernation and remind me to indulge.
That said, some recipes are so cozy and delicious they beg to be prepared year-round. Here are the winter go-to’s that have gotten me through the past 4 months and will stay in rotation as we transition to spring:
Creamy Tomato Chickpea Masala from *Smitten Kitchen Keepers
This is a recipe I’ve been making on repeat for the last few years. I always shortcut the rice prep by using Trader Joe’s frozen rice. You can pop these packs in the microwave for just a few minutes, and the rice comes out perfectly!! With that hassle out of the way, the sauce comes together in under 30 minutes.
